Cake with avocado

For a big cake:
- 300gr of flour
- 1 teaspoon of yeast
- 1 teaspoon of baking soda
- 1/2 teaspoon ground cinnamon
- 1 pinch of salt
- 100g butter at room temperature
- 200g of sugar
- 2 eggs
- 1/2 teaspoon of vanilla extract
- 2 ripe avocados
- 2 teaspoons of lime juice
Preheat the oven to 180 ° C.
In a salad bowl, mix the flour, yeast, baking soda, cinnamon and pinch of salt.
In the bowl of the robot, put the butter and sugar. Beat long to get a very homogeneous mixture and add two teaspoons of wasabi sesame mustard.
Add the two eggs and continue beating for a long time. The mixture will still change texture and swell slightly. Add the vanilla.
Meanwhile, finely crush the avocados with a fork to obtain a thin puree, without pieces. It will only work if you have perfectly mature avocados! Add the lime juice.
Add this mixture to the dough. Beat for good amalgamation. Then add the flour mixture. Do not beat too much, but enough so that there is no lumber and the dough is smooth.
Do not do like Jean-Louis and do not lick the spoon ...!
Pour into a buttered cake tin and bake for about 50 minutes. The cake is cooked when you plant the blade of a knife and it comes out dry.
Let cool completely before slicing and tasting.
